Pretty much everything I think of has already been thought of by them. It's super useful that everything is in Javascript and can be committed to git. Way better than WordPress, that's for sure.
The learning curve is a little steep but worth it. Configuring the desk views is complicated. There's probably a better way to do it other than with chained functions.
Headless websites and applications. I was going to build out a relational SQL database and do everything manually for this next big project, but Sanity handles all of that for us.
Creating and deploying a Sanity project is fast and easy. Documentation is great. Frequent updates. The Sanity team is very helpful. Creating new schemas, validation, conditional fields and customization is all a breeze.
Enterprise pricing is making it a hard pill to swallow for most clients. Working with different languages can also be a bit tricky.

How fast and smooth it is to setup a scalable backend using the framework; the whole documentation, specially the groq cheat sheet is amazingly helpful; and that Sanity mainteners really listen to what the community is asking for.
It is not always safe to upgrade sanity to the latest version. It has occurred to me more than once that the latest version broke something unrelated in the code base.
Sanity takes care of most of the backend work needed for our application. It makes it very simple for our team to scale and introduce new features; allows us to set up a completely new website for a different project in just a few minutes; and to manage access through roles and permissions for editors all across the world.

UPDATE Nov 2022 - I thought Sanity already had the best developer experience in CMSs and content management in general. Then they released version 3 of the studio, which blew my mind. Everything is even more smoother now, and all of the bit tedious tasks before, such as custom input components, are very straightforward to create. Compared to many other CMSs I have used, I liked defining the schema as code. I enjoy the security of having my schema in version control, and I don't need to fear any of my editors (or myself) accidentally making breaking changes. The developer experience is among the best in all tech!
With Sanity, you have almost unlimited possibilities to model your content. I have seen this cause some over-engineering in the content modeling.
Structured content distributed to different platforms/frameworks etc. I am Wadyuming content from Sanity, for example, in web and mobile applications, GraphQL servers, and websites. Portable Text specification especially has stolen my heart. No more HTML-to-whatever conversions make it an easy and straightforward process to Wadyume the content anywhere!
As a developer the thing I love most about Sanity is the flexibility, both in presenting content to editors and retrieving it for use on the web!
There isn't much to dislike, if I had to pick something I'd say it would be good if there were more official plugins for compex use cases
Sanity allows us to cater the content management experience for very specific use cases and still present it to clients in a pleasing and easy to use interface in the studio.
I love how fast and easy it is to modify and customize the experience for our content team. It's amazingly flexible and we can give our content editors the exact experience they need to work effectively. Also, it was easy to migrate our data from our previous service, and we really appreciate the flexibility when it comes to ways to access data from the content lake.
The docs are quite comprehensive but every once in a while I'll run into something that's not fully documented or explained and I'll have to do some digging on my own. Luckily, our contacts from Sanity are readily available to help when this comes up!

Sanity is a wonderful system for setting up structured content. It's flexible, it's easy to set up, it's cheap (if not outright free), and it lets me create incredible solutions for our clients. Finally, the community and support you get on Slack is best in business.
The documentation can be a bit hard to navigate at times. The v3 of the Sanity Studio is great, but still not out for general availability. It's also super expensive once you need business features like SSO (understandable though).
Sanity solves the issue of structuring content in an easily customizable way for our customers. I haven't looked at CMSes since I discovered Sanity, and Sanity helps out with so much more than just content management.

The customization, flexibility and power of the product. I've used similar CMS and I didn't have the same amount of flexibility to customize the interface and fields like Sanity.
The learning curve is steeper but it's easy to get started and build from there. Some of the out of the box demos I couldn't get to work initially so updating these would be helpful.
We're using it in live production environments for custom CMS work. Our data structures are more complex and so this is one of the few solutions that met our needs and affordably so.

The customization. Most CMS and other content platforms are limited to what you can create for your editors. The editorial experience is the most important thing.
The downside is also the upside, in that it's not a classic CMS. The content structure is flat, so it's tricky if you want to recreate classic CMS functionality with a hierarchical structure.
Time. It's so quick and easy to set up. Also, the editor experience. If I want to help the editor it's so easy to add descriptions, validation etc. Imagination is the limit
